Background Highlights

I graduated in Hotel and Catering Management and later in business and operations.

My intention was always to develop a career in management, but I decided that this would be best served if I started as a commis chef, so I worked in hotels and restaurants for a few years before moving into what was then seen as the very unglamorous world of "contract catering". With hindsight this was probably the best decision I ever made.

Remember this was at the time before the celebrity TV chef and food hadn't really grabbed the public imagination as it has today and let's be honest, the real attraction was the promise of regular hours and training and development opportunities. These turned out to be second to none.

There is No Substitute For Real Practical Experience

Anyway, my career developed with leading service providers in the food and hotel services industry and I managed businesses with turnover in excess of £30,000,000.00. This gave me wide range of experience in commercial catering, hospitality, fine dining as well as systems with clients, many of who are household names in business, industry, education, and retail sectors.

In 1989, I joined a specialist business as Operations Director and successfully developed a client portfolio, which included fine dining venues and corporate properties. I was then appointed Regional Operations Director for a major UK organization. Whilst in this role, I successfully completed a number of business systems projects; the first assignment of this type resulted in savings of just under £2,000,000.00.

Since then, I have managed a variety of projects, including developing catering policy and outsourcing strategies, tendering of catering and hotels services contracts, development of food service concepts, business improvement programmes, quality assurance and customer service initiatives, Investors in People and ISO9002.

A Step Into The Unknown

I had been consulting albeit for an international food services provider for a few years and, in 1998, I decided it was time to go it alone. Well maybe not quite alone…

I knew the business inside and out and I wanted to share my knowledge and experience with carefully selected clients who would truly benefit from us working together. I know this sounds really cheesy, but it's true and OK, I also wanted to earn a good living from it and have the freedom that really only comes from being your own boss.

Well, that's the "who", now for the what and why.
